This past weekend, I was craving for some Pate a choux. I haven’t had any of these bad boys in so long. If I can remember, the last time I had this was on my wedding day, which was over five years ago. Since I’ve been working at home during the weekends lately, I decided to make my own Pate a choux. Pate a choux is a classic French, light pastry dough that is also used to make eclairs. Some people also make this into savory cheese pugs but I just simply like it as a dessert treat. I filled mine with vanilla pudding but I heard you can fill it with ice cream as well. These bad boys are so easy to make and yet delightful to the taste.
1/2 cup (1 stick) unsalted butter, cut into 1/2 inch pieces
1 tsp. sugar
1/2 tsp. salt
1 1/4 cups all-purpose flour
4 large eggs, plus 1 large egg white
Preheat the oven to 400 degrees. Bring butter, sugar, salt, and 1 cup water to a boil in a medium saucepan. Remove from heat. Using a wooden spoon, quickly stir in flour. Cook over medium-high heat, stirring constantly, until mixture pulls away from sides. Transfer to the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until slightly cooled, about 1 minute. Raise speed to medium; add whole eggs, 1 at a time, until a soft peak forms when batter is touched with your finger. Transfer to a pastry bag or in my case a Ziploc bag with a 1/2-inch plain round tip. Pipe 1-inch rounds onto baking sheets lined with parchment paper, spacing 1 inch apart. Bake in 400 degrees for 10 minutes and then reduce oven temperature to 350 degrees. Bake until golden, 20-25 minutes. Transfer over to a wire rack; let cool completely. Puffs can be refrigerated in an airtight container up to 1 day or frozen up to 1 month. You can add any filling you like after this. I made sugar-free vanilla pudding. Ta Da! Now you got yourself, a delightful dessert. Enjoy!
Happy Tuesday Everyone!
Sorry it has been so long since I last blogged. I promise from now on I will try to blog at least once a week. Thank you for still keeping up with my post. Even though I’ve been MIA, you guys are still very supportive. I am sure the last time you heard from me was regarding my boutique. Anyways, lets get straight to my post for today.
I recently went on a trip with my husband to Cabo San Lucas, Mexico. This was our first time here and we had a great experience. We chose a very nice resort. It did not have a bunch of teens or college kids like Cancun. We stayed at Pueblo Bonito Sunset Beach private resort. It is crazy how huge this resort is. They have 2 markets and like 6 pools (I think). The beach was beautiful but we really couldn’t swim because of the current. The weather was beautiful during the day but chilly at night. Of course… I did not check the forecast before packing, so we did not bring any sweaters or jackets to keep us warm at night.
We then did the activity boat where it took us out to Lover’s Beach. Can I say how beautiful it was. The view was just awesome! The trip was definitely not long enough but hopefully next time we will be able to take our kids to enjoy the trip. We said to each other that this was going to be our last trip with just us, the next one will be as a family with our two kiddos. I definitely recommend this place if you plan to visit Cabo. I can’t begin to tell you how awesome this resort is. They have over 500 rooms and they navigate around by driving golf carts. They even have a free shuttle to take you to their sisters hotel. All in all, our vacation was relaxing and fun! What are you doing this summer?
Our beautiful view!
The food was delish! I know we got sushi, but they really make some awesome sushi!!!
One of the sister’s hotel that we visited. Very beautiful!
Our little adventure to Lover’s Beach. By Day 3 we decided to leave the camera in the room and have some relaxation by the pool with some mojitos. We also enjoy relaxing at the cigar bar with great wine and beautiful music. We definitely plan to visit again!
